Recipe: SunButter-Apple Breakfast Quinoa

What You’ll Need:

  • 1 c red or white quinoa, rinsed

  • 2 c water

  • 1/3 c peanut, almond, or nut butter of choice (I use SunButter)

  • 2 tbsp honey

  • 1/2 tsp ground cinnamon

  • 1 large or 2 small honey crisp apples, cut into bite-sized chunks

  • Olive oil

  • Optional: top with coconut flakes, chia seeds

What You’ll Do:

  • In a large saucepan, bring quinoa and water to a boil. Reduce heat to low, and then, cover and simmer until quinoa is tender and tails come out (about 15-20 minutes).

  • In a second pan lightly saute the apples in cinnamon and honey with a drizzle of oil.

  • Remove quinoa from heat. Stir in a nut butter of choice. Top with apples, and then drizzle with additional honey and sprinkle additional cinnamon. Add coconut flakes and chia seeds if you’d like. Serve immediately!
