Recipe: Chickpea Cookie Dough Bites

A sweet treat that contains fiber, protein, and heart-healthy fat!

These chickpea cookie dough bites are stacked with nutrient-dense ingredients, and super easy to make.

They’re also completely safe to consume raw since there are no raw eggs.

What You’ll Need:

  • 15 ounce can chickpeas, drained and rinsed well

  • 1/3 cup salted nut butter (I use SunButter)

  • 1/4 cup organic (i say organic here because oats are highly sprayed with glyphosate) oat flour or for more texture use steel cut oats

  • 1.5 tsp vanilla paste(or vanilla extract)

  • 1/4 cup pure maple syrup or honey

  • 1/2 tsp kosher sea salt

  • 1/4 cup bittersweet chocolate chips(plus extra for topping)

What You’ll Do:

  • Line a sheet pan with parchment paper and set it aside.

  • Add chickpeas through salt to a food processor and run until completely smooth, scraping down the sides occasionally.

  • Transfer to a small mixing bowl and stir in chocolate chips(reserving some for topping)

  • Use a spring-loaded cookie scoop to portion into 1.5 Tbsp size balls and drop on the sheet pan. Roll each between your hands. It will be a little sticky, but you should be able to handle it. Push a few reserved chocolate chips on top of each.

  • Freeze for at least 30 minutes (until solid), then transfer to a freezer-safe bag or food storage container.
